I love any kind of cheese and Brie is no exception. I first had this at my friend Staci's and made it at Christmas. It's really simple and looks pretty.
1/4 cup apricot preserves (optional)
1/2 lb. wheel Brie
1/2 lb. frozen phyllo dough, 10-12 sheets, thawed
1/2 cup melted butter
Spread preserves on top of Brie
Wrap the Brie in thawed phyllo dough sheets one at a time, brushing each sheet with melted butter.
Turn cheese over after wrapping each sheet for even distribution
Cover and refrigerate until serving
Before serving place phyllo wrapped Brie in a shallow baking pan. Bake in a 425 degree oven 8-12 minutes or until golden. Let stand 10 minutes. Serve with crackers.
