Our First Post ever! I'm so excited we are finally doing this.
First off is a family favorite my Aunt Jane's famous mashed potatoes. We can't have a holiday without them.
Aunt Jane's Famous Cheese Potatoes5 lbs. potatoes
1 can cream of mushroom soup
1/2 lb. grated cheddar cheese
1 cube real butter
fresh parsley to taste
1 cup sour cream
1 minced or chopped onion
Peel, cut and boil potatoes until tender about 20-25 minutes. Drain. Mash until desired consistency just like you would for regular mashed potatoes.
Mix all ingredients for sauce except the sour cream . Cook over medium heat until the cheese melts. Mix sauce into potatoes. Add the sour cream. If they seem too wet or soggy add some italian bread crumbs. Enjoy!
*If you are using fresh onions, saute in butter for a few minutes before adding other ingredients for the sauce. If using minced, dry onions you can just add them right in with the sauce.*

I am so honored to be mentioned on your lovely site. We have had these potatoes many times together. This year for Thanksgiving at Pismo--I changed it up a bit--and used Yukon Gold potatoes, added some canned milk----Yum! I always make them just a little different each time. I love reading all your recipes and am going to make your meatloaf this Sunday.
