I want S'more Muffins







I was looking for something quick to whip up before soccer today and came across these in a cookbook my Mom gave me for Christmas. They only took 15 minutes to cook and came together really quickly. They were so yummy and went perfect with hot cocoa for a nice morning treat.




S'mores Muffins




3 tablespoons butter, softened


1/4 c packed brown sugar


4 tsp sugar


1 egg


1/3 c sour cream


2/3 c all purpose flour


1/2 c graham cracker crumbs


1/4 tsp salt


1/4 tsp baking powder


1/4 tsp ground cinnamon


1/8 tsp baking soda


3 tbsp milk


1/3 cup milk chocolate chips


6 tablespoons marshmallow creme




1. In a small mixing bowl cream butter and sugars until light and fluffy. Beat in egg. Stir in sour cream. Combine the flour, graham cracker crumbs, salt, baking powder, cinnamon and baking soda; add to creamed mixture alternately with milk just until moistened. Fold in chocolate chips.


2. Coat 6 muffin cups with cooking spray; fill one-fourth full with batter. Spoon 1 tablespoon marshmallow creme into each muffin cup. Top with remaining batter.


3. Bake at 400 degrees for 14-16 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm. Makes 6 muffins.
