BBQ Chicken Pizza

We really like pizza around here. We've tried, this, this and this. My newest attempt was BBQ Chicken Pizza. I've ordered it several times at restaurants but never made it at home.

Basically, you take your traditional tomato pizza sauce and replace it with bbq sauce. Next load it up with grilled chicken, two kinds of cheeses, and top it off with red onion and a sprinkling of cilantro.

Delicious and different, I loved this twist on classic pizza. The bbq sauce and chicken were like peanut butter and jelly. Just made for each other. Mixed with red onion, cilantro, and lots of cheese, this pizza will be a regular on our pizza menu. If you're feeling indulgent, crumble some crispy bacon and add with chicken.

BBQ Chicken Pizza
Adapted from Taste and Tell

1 recipe pizza crust. I used the recipe below

Slow-Rise Pizza Dough
2 1/4 teaspoons yeast
1 1/3 cup water
3 1/2 to 4 cups flour
2 teaspoons salt.

Directions for baking pizza:
Preheat oven to 475 degrees. (If using a pizza stone, let stone heat for at least 30 minutes in the oven before baking pizza.) If baking in a sheet pan, press dough onto sheet pan and top with sauce and toppings. Bake for about 12 minutes (checking often) until crust is browned and cheese is golden and bubbly. If baking on the preheated pizza stone, slide pizza onto stone and bake for about 8 minutes. Makes 2 medium pizzas.

1 boneless, skinless chicken breast, grilled and cut into bite sized pieces
1/4-1/3 cup bbq sauce (I basically spread around an amount that looked good)
1- 1 1/2 cups shredded mozzarella cheese
1/2 cup shredded smoked Gouda or cheddar cheese (I've told both and they're each delicious)
1/4 cup thinly sliced red onion
2 tsp. finely chopped cilantro

Preheat the oven to 475 degrees F.

Roll out pizza dough. Spread bbq sauce evenly over crust. Sprinkle  half the mozzarella and all of the Gouda or cheddar cheese. Top with chicken and onion slices. Sprinkle with remaining mozzarella cheese.

Bake pizza for 10 to 15 minutes or until the crust is lightly brown. Top with cilantro. Makes 1 medium pizza.

Homemade Pizza Sauce

This is seriously so easy I can't believe it. I saw it on Real Mom Kitchen. She has great recipes and most have minimal ingredients and can be made quickly. Now that I've had homemade sauce I'll never go back. This takes 5 minutes tops! It's a great dipping sauce for breadsticks too.
Sorry, there's no picture. I'll snap one next time.

Pizza Sauce

1 (14 1/2 oz) can tomatoes (I used use diced)
1 (6 oz.) can tomato paste
1/4 tsp oregano
1/4 tsp basil
1/4 tsp black pepper
1/4 tsp salt
1/8 tsp garlic powder
1/8 tsp onion powder
1 Tbsp sugar
Place all ingredients in a blender and pulse until reaches desired consistency.

Easy Pizza Crust

This was another find from All recipes. I love the fact that you can read other people's comments and see a rating before you make it. I thought my pan pizza crust wasn't going to turn out so I quickly whipped this up. It was great. 5 minutes to measure and 10 to rest the dough and it was ready. My husband prefered this crust to the pan crust because he likes a chewy, soft crust better. I loved the fact that I could make this so quickly and not have to wait 2 hours for the crust to rise. I sprinkled mine with a little garlic salt w/ parsley.
Valentino's Pizza Crust

1 cup warm water (110 degrees F/45 degrees C)
1 tablespoon white sugar
2 1/4 teaspoons active dry yeast
3 tablespoons olive oil
1 teaspoon salt
2 1/2 cups all-purpose flour

DIRECTIONS
Stir water, sugar and yeast together until dissolved. Add the olive oil and the salt. Stir in the flour until well blended. Let dough rest for 10 minutes.
Pat dough into pan or on to a pizza stone using fingers dipped in olive oil. If desired sprinkle basil, thyme or other seasonings on crust. Top with your favorite pizza toppings and bake for 15 to 20 minutes in a preheated 425 degree oven.

Pan Pizzas

I am so in love with this pizza. I found it on a cute little site called DaytoDay with Holly J. She has inspirational quotes and recipes. I liked this pizza because it made 3. They are made in 9 in. cake rounds and it was great because we could make 3 different kinds of pizza so everyone was happy. (I actually thought there weren't going to turn out because the crust was very tough when I was rolling it out so I made another type of crust which I will post next. ) This crust tastes exactly like the Pizza Hut Pan Pizza's so if you like them, you will love these. They are a little crunchy but soft on the inside and a little greasy just like Pizza Huts. If you prefer more of a soft dough try the quick pizza crust. Make sure and check out my following posts for a super easy pizza sauce. I will never settle for store bought again. Top it all off with some homemade ranch dressing.

Pan Crust Pizza

Dough:1 1/3 C Warm water (105F)

1/4 C Non−fat dry milk

1/2 tsp Salt

4 C Flour

1 Tbsp Sugar

1 pk Dry yeast

2 Tbsp Vegetable oil (for dough)

9 Oz Vegetable oil (3 oz. per pan)

Butter flavored Pam

Put yeast, sugar, salt, and dry milk in a large (2 qt.) bowl. Add water and stir to mix well. Allow to sit for two minutes. Add oil and stir again. Add flour and stir until dough forms and flour is absorbed. Turn out on to a flat surface and knead for about 10 minutes. Divide dough into three balls. In three 9" cake pans, put 3 Oz. ofoil in each making sure it is spread evenly. Using a rolling pin, roll out each dough ball to about a 9" circle. Place in cake pans. Spray the outer edge of dough with Pam. Cover with a plate. Place in warm area and allow to rise for 1 to 1 1/2 hours.

For Each Nine Inch Pizza:Preheat oven to 475F. Spoon 1/3 cup sauce on dough and spread to within 1" of edge. Distribute 1 1/2 Oz. shredded mozzarella cheese on sauce. Place toppings of your choice in this order: Pepperoni or Ham, Vegetables, Meats (cooked ground sausage or beef). Top with 3 Oz. mozzarella cheese. Cook until cheese is bubbling and outer crust is brown about 15 minutes.

*It is very worth it to invest in a thermometer so you can test how hot your water is. You would probably be surprised at how hot 105 degrees feels.*

Pizza Pockets

My family loved the Chicken Rolls so much that I decided to try some other filling ideas. All of my kids will eat pizza so that is what I made. It was really tasty. Especially dipped in a little ranch. It tasted just like a little pizza sandwich with the nice butter taste from the crescent rolls. I made enough that I can stick them in the fridge for a quick snack. Just like a little hot pocket only better.
Pizza Pockets
2 pkgs. pilsbury recipe creations (they are like crescent rolls, but just one big square)
1/2-3/4 c. pizza sauce, depending on your taste
48 pepperoni slices
2 cups shredded mozerella cheese
1/2 cup butter, melted
1 cup stove top stuffing, crushed
1.Unwrap dough. Cut into 6 small squares (or if you like larger 3) for each package.
2. Spoon about a tablespoon of pizza sauce on each square.
3. Spread pizza sauce ,making sure to leave the edges plain so you can seal them.
4. Put 4 slices of pepperoni on each square (more for larger)
5. Top with cheese
6. Fold in half and seal edges all the way around.
7. Brush each pocket with melted butter and sprinkle with crushed stuffing
Bake in 350 degree oven 25-30 minutes until golden brown.
Serve with ranch or your favorite dipping sauce. Makes 12 small or 6 large pizza pockets.
Be creative. You could use any pizza toppings you like--sausage, green peppers, pinepple, etc.
