I love the chocolate trifle but now that warmer weather is here (hopefully to stay) I wanted to make something a little lighter. I picked up some cheesecake pudding mix awhile ago and had to use up some strawberries so I thought a strawberry cheesecake trifle would be perfect. Adding the sweetened condensed milk makes it firm almost like a cheesecake so if you prefer a creamier filling, leave out the sweetened condensed milk or just make the pudding according to the package directions,but still adding the cool whip . (Also see my note at the bottom). If you leave out the sweetened condensed milk you will probably want to serve it as soon as it is chilled. You could also do this with bananas or mix the bananas and strawberries. You could also use vanilla pudding if you don't like cheesecake. This makes a lot. I would say 16-20 servings. You could easily cut the recipe in half.
Strawberry Cheesecake Trifle
2lb. of pound cake (homemade or storebought)
1 or 2 (3.4 ounce) packages instant cheesecake pudding mix *see note at bottom*
1/2 cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed or homemade whipped cream
1 (12 ounce) container frozen whipped topping, thawed or homemade whipped cream
1 container strawberries. sliced
DIRECTIONS
Cut pound cake into 1 inch squares.
In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.
In a trifle bowl or glass serving dish, place half of the pound cake, half of the pudding mixture, half of the 12 ounce container of whipped topping and half of the strawberries. Repeat layers. Garnish with strawberries. Refrigerate 8 hours before serving.

*Note- I was adapting this from the chocolate trifle but accidentally added 2 pudding mixes instead of 1. It would probably be less dense with one package of pudding. You can try it either way and see how you like it. I thought it was great with two but might try it the other way next time. *
