Do you ever feel like pancakes but don't want to sit there at the griddle flipping and pouring all morning? I just found a yummy recipe for pancake squares. My kids loved them and you can mix these up by adding fruit or chocolate chips, etc. They do take longer than normal pancakes but that is just in baking time so you can be doing dishes, hairdo's all that fun morning stuff while you're waiting. I used a 9x9 square pan so if you used the 8x8 they will probably be even taller and fluffier. You can also easily double this recipe and use a 9x13 pan.
Pancake Squares
from Big Red Kitchen
3/4 c. milk
2 tablespoons melted butter
1 large egg
1 tbsp. sugar
1 cup flour
2 t. baking soda
1/4 tsp. salt
Preheat oven to 350 degrees. Lightly grease and 8x8 dish. In a large bowl, beat together milk, butter and egg. Add sugar, then gradually beat in the flour. Carefully stir in the baking powder and salt. Add in any desired fruit, etc. Pour batter into prepared pan. Bake for 20-25 minutes. Serves 4-6
