Peanut Butter Toffee Cookies

Peanut Butter Toffee Cookies
This is another one of Anne's delicious treat recipes. I went on a cookie frenzy for a meeting today and my husband said these were his favorite.
3/4 cup all purpose flour
1/4 tsp baking soda
dash of salt
4 tbsp unsalted butter, room temperature
1/2 cup sugar
1/2 cup smooth peanut butter
1 egg
2 chocolate toffee covered candy bars 1.4 oz each, chopped
sugar for sprinkling
Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda and salt. In a large bowl, with an electric mixer on high speed, beat butter and sugar until light and fluffy. Add peanut butter and egg; beat until smooth. With mixer on low, gradually add flour mixture. Stir in toffee. Drop cookies onto ungreased cookie sheet. The recipe calls to smash with fork like traditional peanut butter cookies but I think they look much prettier just left alone and sprinkled with a little sugar so that is what I did. Bake 16-18 minutes or until edges are golden brown. Do not overbake. Makes 24 cookies
