Chicken Cesar Pasta Salad


This is a copycat recipe from one of my favorite restaurants Pizza Factory. It's not really even a recipe more of an idea, but here it is. I love to have this for lunch or a light summer dinner with breadsticks and an ice cold glass of lemonade.


Chicken Cesar Pasta Salad


8 oz. boneless skinless chicken breast cooked in 1 tbsp olive oil and seasoned to taste with garlic powder, salt and pepper


2 oz. cooked bowtie pasta


handful of cherry tomatoes


handful of crutons


1/4 cup sliced mushrooms


2-3 cups romaine lettuce torn into bite sized pieces


3-4 tablespoons cesar dressing


freshly grated parmesean cheese


salt and pepper to taste


Slice chicken breast into bite sized pieces. Toss together all ingredients. Toss with cesar dressing and top with parmesean cheese, salt and pepper. This makes approx 2 large servings.
